Eclairs with chocolate glaze

Today I will share the recipe for this dessert gentle. Eclair is a French dessert in the form of an

oblong patties choux pastry with cream.



Ingredients:

For the dough:
100 g of the oil
1 tsp. Sugar
0.5 tsp. Salt
1.25 cups flour
4 large eggs
1 egg white

For the cream:
6 egg yolks
1 egg
100-150 grams of sugar 2 tbsp. spoons of sugar
3 tbsp. spoon starch
3 tbsp. tablespoons flour
3 tbsp. tablespoons oil
3 cups of milk (600 ml)
1 teaspoon vanilla extract

In a water bath to soften the oil to a liquid state, add sugar and salt. Remove from heat slowly, stirring, add the flour. Again put on a very low heat and, stirring constantly, cook for a few minutes, usually no more than 3 minutes, until a thick homogenous dough, easily peeling from the walls of the pan.
Further, it is desirable to use a mixer. Constantly stirring, add eggs one at a time. Egg whites whipped into a solid foam and also add to the dough.
Preheat oven to 180 degrees, baking vystelit baking paper. Fill the syringe or cooking bag and squeeze the dough on a baking small "fingers" or circles. Bake for 20-30 minutes (depending on the size). Cool.

Cream prepared as follows:
Rub the yolks, egg and 2 tablespoons. spoons of sugar. Add starch and flour. Milk to heat, add sugar and bring to a boil. Slowly introduce half the milk in yolk mixture, stirring constantly. Then pour this mixture into the remaining milk, bring to a boil and immediately remove from heat. In cream introduce oil and vanilla. Cool. The cream can be prepared in advance. It is stored in the refrigerator for 3 days.

Eclairs filled with cream (or syringe, or cut in half). Sprinkle top with melted chocolate or chocolate coating (sugar powder, cocoa butter and a little water).
